The book would naturally present an enormous variety of material, in widely varying styles. probably fair, then, to adopt a relatively neutral style for your own layout/typography, one that doesn't favor any one or other of the example. Because it's unlikely that any (or at least many) of your examples would adopt a modernist/functionalist design, such a design (i.e., "swiss") might be appropriate to the book itself.
And yet I recognize that the book needs not to intimidate or otherwise alienate your readers.
